Resumen

Para el año 2023, Colombia reporta que el 1.36% del café exportado es tostado, lo que refleja barreras significativas en la transformación de café verde a tostado. Las PYME del sector rural enfrentan baja adopción de tecnologías debido a limitaciones técnicas y financieras. Esta investigación tiene como objetivo identificar los factores de adopción tecnológica en la fase de tostado de la cadena de valor del café en PYME colombianas. Para ello, se realizó un estudio de caso cualitativo en la empresa "Del Campo Girardota" (Girardota, Antioquia), donde se aplicó una encuesta para comprender cómo se gesta la adopción de tecnología, utilizando como ejemplo específico una de las maquinarias más relevantes del proceso de transformación. Los resultados evidencian que la adopción de tecnología en esta PYME se materializa en tres momentos específicos. Primero, la vigilancia competitiva, que permite identificar tendencias tecnológicas y procedimentales. Segundo, la priorización y selección de tecnologías mediante una matriz que evalúa no solo la capacidad operativa y financiera, sino también aspectos técnicos como la reducción de costos y tiempos, así como tecnologías conexas. Tercero, la prueba de conceptos, una vez seleccionada una tecnología específica para un proceso preseleccionado. Este procedimiento fue validado a través del tostador, corroborando los pasos y criterios de decisión mencionados. Los resultados amplían la discusión sobre productividad, competitividad y sostenibilidad de las PYME del sector.
